Roux was born and raised in Austin, TX, studying and receiving a degree in Culinary Arts at Le Cordon Bleu. All while cutting his teeth in some of Austin’s fine dining restaurants, working alongside Iron Chef Kent Rathbun, at Jasper’s. Some others are Austi Trattoria, Hickory Street, and TRACE at The W Hotel. Roux then found himself in Dallas, TX, where he prospered at The Mason Bar in Uptown, and finding a family within community in Deep Ellum Dallas, a favorite among “Dallasites” — full of art, music and food. Roux left TX and headed out northwest for a change in food, heading up to the Pacific northwest. This search for culinary knowledge brought him to Portland OR, working at the world famous Peoples Pig food truck Portland. Furthering this thirst for knowledge he continued to Montana, finding a new home in Helena. He settled in and became the lead line at The Legal Tender, consulted and assisted in the opening of Bridge Pizza, before joining the team managing at Real Food Market and Deli. Always going back to a love and passion in uniting communities together, Roux founded Southpaw Food Truck and Catering in 2021. Since then he has been able to attend and serve local Helena festivals & community events. Expanding into catering and private curated dinners along the way. Roux’s love of all the world’s street food, and the communities it supports is how Roux was able to share himself with his new community. Making appearances at festivals & events like Wake the Giant music festival, Helena Farmers Market, the Boeing Aviation Show, among many more. In his constant efforts in unifying his community, he has had the pleasure of working with non profits such as Westmont, NAMI, and Florence Crittenton. As he enters his 3rd season with Southpaw, he hopes to further his reach within the Helena community by bringing everyone together, one bite at a time.
